Sambole

We know majority of our Sri Lankan Recipes have the influence from South India. And those recipes and signature dishes come with many varieties of colours and flavours which are blended in hot spices. Among all these curries or dishes, Sombole is one of significant dish there. When saying Sambole, Pol Sambol is the dish coming to our mind. But not only Pol Sambol, there are some other Sambol dishes. Red Chilli Sambol, Onion Sambol and pol sambol are some of them.  We’ll share the simple steps of making all these dishes.

Pol Sambole (Coconut Sambol)

Ingredients;

Grated coconut – ½ cup

Red chilli flakes – ½ tbs

Onion (medium size) – 01

Maldive Fish (Umbalakada) – 1 tbs

Garlic – few peices

1 Lime

Salt – ½ tsp

How to make pol sambole;

To mix the red chilli flakes, maldive fish, garlic and salt, you have to use a stone mortar or a grinder or a “miris galak”. Firstly, you have to pound or grind them well. Then you should add sliced onions and pound or grind them again, until the onions turn mushy and well blend with chilli mixture. After that, you should add the grated coconut and grind/pound them again for few minutes.

Thereafter, you can add lime juice and salt as you want. Now your pol sambol is ready to serve. You can serve it with bread, rice or with string hoppers.

See, it’s not a complicated recipe. In Sri Lanka, when we serve this Sambole, most of time, we are serving a dhal curry dish (parippu) also. Therefore, don’t forget to make a dhal curry along this.
